Summer is the perfect time to get out the grilling recipes and gather up produce that’s in season. This week I was perusing some of my recipe binders and happened upon this timeless favorite. Whether you are looking for a quick weeknight meal or something delicious to serve up on the weekends, this Grilled Salmon with Tropical Salsa is an island delight.
My daughters love the salsa on top. I grill salmon for myself and one daughter, chicken thighs for another daughter and my hubby. And my oldest, who is vegeterian, loves grilled portabella mushrooms. Then we all pile heaping tablespoons of this tropical salsa on top.
The fun thing about a salsa is that you can make it your own. Harvest what you have in your garden or pick out a few faves from your local grocery store or farmer’s market. I’ve made this salsa with strawberries, peaches, watermelon, zucchini and cucumbers to give you a few ideas.
